Serves 4
Olive oil spray
4 white fish fillets (about 180g each)
1 clove garlic, crushed
12 black olives pitted and roughly chopped
2 cups passata
¼ cup fresh basil, chopped plus extra for garnish
1 tablespoon olive oil
Preheat oven to 180C.
Spray saucepan with oil, add garlic and cook gently for 1 minute. Add passata, olives and basil and heat, stirring occasionally until hot.
Spray a baking dish with oil. Cut each fish fillet in half and arrange in the dish in a single layer. Pour over passata sauce and drizzle with olive oil. Bake for 20-25 minutes or until fish flakes with a fork in the thickest part. Cooking time will vary depending on the thickness of the fish
Top fish with fresh basil, serve with salad and crusty bread
